FROM FARM TO FORK
The story of Fitzgeralds Woodlands House Hotel & Spa begins with the land. Ever before they became hoteliers, Dick (RIP) and Mary Fitzgerald were farmers rearing their own beef cattle and growing a variety of vegetables and fruits.
When they opened their bed and breakfast back in 1976, their menus were created around seasonal produce primarily from their own farm. The land has remained important to the Fitzgerald family, not least as a source of produce for their busy restaurant, Timmy Macs Bistro The hotel spends more than €2.5m each year with local suppliers, earning them the honour of being Limerick’s first Guaranteed Irish hotel.
A number of years ago, Mary Fitzgerald created an organic garden in the grounds of the hotel to supply the kitchen and Dicks bar with the freshest and most natural ingredients possible. Following on from that, the Fitzgeralds embarked on a journey to convert the land into a certified organic farm, becoming one of a small handful of hotel properties in Ireland to grow its own certified organic produce.
Produce from Mary’s Organic Garden and the farm can be found on the breakfast table, in a host of dishes at Timmy Macs Bistro, as drink ingredients and garnishes served in Dicks Bar.
